We’re heading back to school in just a few short weeks! I can’t believe how quickly the summer has flown by.

I’m already busy getting ready for back to school shopping, school registration, doctors, and dentists appointments, play dates and work.

The last thing I have time for is worrying about cooking a fancy meal for my family, especially when we got used to relaxed dinner times and lots of grilling outdoors during the summer.

Our lives, however, get into a totally different rhythm when the kids are back at school. We also get so busy with work that by the time 5 pm rolls around I’m already dreaming of bedtime!

One of my all-time favorite ways to make the back to school routine run smoothly is to plan ahead easy weeknight dinners that my family will enjoy.

I plan the whole first week of school with simple and fast meal ideas. This helps us transition from a summer to a school schedule and gives us a relaxed dinner time for my kids to talk about their first week at school, new schedule and new friends.

We like to dress up our State Fair Corn Dogs with a homemade honey mustard dipping sauce which tastes amazing with the honey-sweetened batter of the corn dogs.

I then add a side of homemade sweet potato fries to make a perfectly delicious meal. It’s a great way for the kids to get some veggies in a fun and easy way.

Homemade Sweet Potato Fries

A few things to remember when making your homemade sweet potato fries:

  • When picking out your sweet potatoes, be sure you’re grabbing the right kind. Sometimes they can be labeled as yams. You want the potatoes with a reddish brown skin and an orange inside.
  • You’ll want to chop your sweet potatoes thin and spread them evenly on the pan so they get nice and crispy.
  • If you put too many on one pan, they can turn out soggy and limp. I usually spread mine out between two sheet pans to be safe.
  • Salt the homemade sweet potato fries the second they come out of the oven.
  • Serve with State Fair 100% Beef Corn Dogs and honey mustard dipping sauce for a crowd pleasing meal.

Homemade Sweet Potato Fries Recipe

  • 2 pounds sweet potatoes (about 3 medium sweet potatoes)
  • 2 Tablespoons olive oil
  • 1 teaspoon salt and a few grinds of pepper
  • ½ teaspoon paprika
  • ½ teaspoon seasoning salt
  • ¼ teaspoon chipotle chili powder

Preheat oven to 450ºF. Peel your sweet potatoes and cut lengthwise into thin (1/4 inch) fry-shaped slices. The thinner the better. Mix your olive oil and spices in a bowl then drizzle over cut sweet potatoes. Mix until every inch of sweet potato is coated. Spread evenly onto two sheet pans if necessary. Bake in the oven for 15-20 minutes. The length of time will depend on how thinly cut your sweet potatoes are. Keep an eye on them, you want them to be charred just a little bit for crispiness and flavor. Remove from the oven and sprinkle with sea salt. Let cool a few minutes, then serve with State Fair 100% Beef Corn Dogs.

Ingredients

  • 2 pounds sweet potatoes (about 3 medium sweet potatoes)

  1. I had to eliminate the chilli pepper (ugh) I so didn’t want to but my grandson can’t have it . But they were still super Good ! Thank you
