Ingredients

  • 8 rice paper wrappers
  • 1 cup shredded carrots
  • 1 cup cucumber, julienned
  • 1 cup bell peppers, thinly sliced
  • 1 cup fresh mint leaves
  • 1 cup fresh basil leaves
  • 1 avocado, sliced
  • Cooked rice noodles (optional, 1 cup)
  • Soy sauce, hoisin sauce or peanut dipping sauce for serving
